The Yolcan project hosted a dialogue between local farmers, chef Elena Reygadas, Lucio Usobiaga, and musician Yo-Yo Ma, focused on raising awareness about the importance of the chinampas of Xochimilco in sustaining traditional culture, the environment, and rural livelihoods, as well as the city itself.

The Yolcan project joined chef Elena Reygadas for a meal and conversation at one of Mexico City’s renowned restaurants, with food made from ingredients grown in the Xochimilco chinampas. Cultural leaders and social thinkers from across disciplines came together to discuss how the chefs of Mexico City have built a relationship with pressing local issues, and how this approach applies to the broader cultural sector.
